Hoto is a local delicacy of Yamanashi Prefecture (Kai Province or Kai-no-Kuni). This signature dish is healthy and balanced, filled with many kinds of ingredients including vegetables; vitamins and fibers, flour or potatoes; starchy food and miso; and proteins. Hoto was selected as one of “the top 100 culinary dishes” by the Ministry of Agriculture, Forestry and Fisheries of Japan in 2007, among local traditional dishes in rural areas.

YUDOFU Hot Tofu and Deep Fried Smelts
This is a popular set menu with fresh tofu made by a tofu specialty shop in the Oshino area, and fresh smelts from Lake Yamanaka. Oshino is famous for its spring water from Mt. Fuji. The crystal clear water is filtered for about 80 years through the underground impermeable layer between lava. The tofu is smooth like silk in texture and rich in taste. Lake Yamanaka is one of the prominent places in Japan for smelt fishing. The fresh smelts are deep-fried to be crispy but soft inside. Both tofu and smelts are simple ingredients, but fresh as a special local delicacy and only available here.

Smelt Specials
“Smelts” are the must-order-item if you come to the Lake Yamanaka area. We serve fresh smelts (winter time only: December to March) as tempura, deep-fried fritters or pan-fried with butter. Smelts can be eaten whole as a perfect finger food, because even the bones are deep-fried. It is very crispy but soft and tasty, even melting in your mouth. The calcium-rich nose-to-tail eating is good for your nutrition. * Fresh smelts are only available in winter (December to March). Frozen smelts are available in the off-season.
